Then for supper I created recipes from Pinterest; Bok Choy Salad, Baked Reuben Casserole and Grasshopper Fudge Cake.

Of the three recipes the salad was our favorite and I will be making that many more times! The casserole was okay...not fabulous, but okay and the same with the cake. I doubt I will make either of them again.

Your spinach roll-ups look yummy! We had ruben sandwiches on St. Paddy's day, I don't like swiss cheese so I always sub provolone or mozzarella. Your casserole looks good. Years ago I use to throw all the ingredients for rubens in a dish, baked it and then spread it on toasted rye.
